Amritsari Nutri Kulcha

Nutri Kulcha is a recipe which is going to awaken your taste buds, its lip-smacking taste will make you drool over all it’s flavours. It is famous dish of worldwide. This dish is often reserved for any special occasion like parties or festivals .

I make this recipe more healthier. I used whole wheat Kulcha.

Ingredients

  • Soya Nuggets – 1 cup
  • Tomatoes – 4
  • Onions – 2 ( finely chopped)
  • Green Chillies – 2 (finely chopped)
  • Garlic- 3 cloves
  • Ginger – 2 (grated)
  • Capsicum- 1 (finely chopped)
  • Spinach- 1/2 cup ( purée)
  • Oil – 2 tbsp
  • Butter – 1 tbsp
  • Coriander Leaves – 2 tbsp
  • Cumin Seeds – ½ tsp
  • Coriander Powder – 1 tsp
  • Red Chilli Powder – ½ tsp
  • Mango Powder – ¼ tsp
  • Garam Masala – ½ tsp
  • Cumin Powder – ½ tsp
  • Tea Bag – 1
  • Salt – 1 tsp (or to taste)
  • Kulcha( whole wheat)

Method

  • First of all take a big pan and add half pan of water in it.
  • Put tea bag , pinch of salt and sugar in water and boil it in the nutri. Keep stirring so that the color spreads equally all over the nutri.
  • Drain the nutri, wash in fresh water .
  • Take a wok and add oil and butter together.
  • Add chopped onion in the wok and saute for 5 minutes.
  • Blend tomato, garlic, ginger and chilli together in blender. Add tomato mixer in the wok along with all other spices and mix well.
  • Sauté until the ghee seperates out. Add capsicum and spinach purée. Sauté more 3 minutes.
  • Add nutri over it and mix properly.
  • Nutri is ready, serve it with kulcha, chopped onion , lemon and some green chillies .

Creamy Mushroom Spaghetti With Garlic Herb Sauce

All you need is 20 minutes and a handful of simple ingredients to make this super easy and quick CREAMY MUSHROOM SPAGHETTI WITH GARLIC HERB SAUCE.

This rich, creamy pasta sauce was the result of an experiment. We wanted to make a creamy mushroom pasta topping with no cream. We’re trying to make it little healthier and while we were eating pasta there was no need to indulge in cream, right?

The creaminess and thickness in a sauce can come through many methods.

INGREDIENTS

• 3/4 lb spaghetti

• 2 Tbsp extra virgin olive oil

• 8 oz mushrooms, sliced

• 2 cloves garlic, minced

• 1/2 cup baby spinach, chopped

• Handful of fresh basil, chopped

• 1 large onion

• salt and pepper to taste

• 2 Tbsp. Oats flour

• 1.5 cups milk

• 1/4 cup fresh parsley, chopped,

METHOD

1 Cook pasta in water according to package directions. Make the sauce while the pasta cooks.

2 In a large saucepan, heat olive oil over medium heat.

3 Add mushrooms to oil and sauté until mushrooms have reduced in size, about 4 minutes.

4 Add garlic, onions, salt and pepper , spinach to mushrooms and stir to combine. Cook until garlic is fragrant and mushrooms have released some additional liquid, about one minute.

5 Add flour to saucepan and stir to incorporate all ingredients. Let cook for 30 seconds or so.

6 Add 1/2 cup of the milk and stir to break up any lumps of the mushroom and flour mixture. The milk will thicken fairly quickly; that’s okay. Add the remainder of the milk and stir to incorporate all ingredients.

7 Bring sauce to a simmer and cook until milk has thickened, about 5 minutes.

8 Remove sauce from heat , add basil and (optional) give one quick blend to sauce. Stir in the chopped parsley.

9 Add pasta in the sauce. Garnish with parsley and serve immediately.


Naaz-e-Kebab

A Nutritional, healthy , delightful Savory evening snack. This crispy kebab nourished with high fibre , minerals , vitamins and beta-carotene.

Ingredients

4 raw Bananas (boiled)
2 Potatoes (boiled)
1 tbsp oil 1 tsp Cumin Seeds
Salt to taste
½ tsp chilli powder
2 tsp finely chopped Ginger
2 tsp finely chopped Green Chillies

1tsp dry rose petals powder
2 tsp chopped Coriander
½ cup Green Peas (blanched)
½ cup mix veggies (capsicum, carrot, beans) fine chopped
1 tbsp chopped Coriander

Method  

1. Wash & trim the head & tail of raw bananas. Heat a pan with water and cook the raw bananas until soft. They will change color. This will take 5-7 mins. Once it cooked , keep it aside for cooling down and peel the skin .

2. Grate the cooked bananas.

3. Add potato ,green chili, ginger , salt, coriander leaves , rose petal powder,chilli powder, peas ,onions and other veggies.Mix together and knead a dough. Do not add water .

4 .Make small balls give them desire shape . Shallow fry them in oil on heavy tawa.

5. Serve hot with mint chutney .
